Yard long beans are sometimes called Asparagus beans or Chinese Long beans. This fast growing, high yielding variety thrives in the heat. It is a black seeded variety and is one of the most popular varieties grown. These extra long red/purple stringless beans are highly prized because of their sweet and crunchy pods. Prepare fertile, well-drained soil. Sow seeds in late spring/summer after last frost in a warm, sunny location. Keep soil moist. Fertilize as needed. Train to climb a vertical support. Harvest in midsummer when pods are smooth, tender and 14-18” long. Used most notably in the popular Szechwan dish Dry-Fried Beans. These may be used to replace string beans in any dish. Can be deep-fried, stir-fried, steamed or used in soups
